Hello and welcome! My name is Kelsey, and I am the founder of Sugar Spun Cakes. I started this company in April 2022 on a whim after seeing a cotton candy cake on social media and thinking they were so fun and unique.
What sets me apart from the others? I produce small-batch gourmet cotton candy. Because I use a vertical cotton candy machine, I can hand colour and flavour all my sugars.
What’s the Difference Between Horizontal and Vertical machines? Horizontal machines are the most common type that most people see at carnivals and events. They run at very high temps, hold 2 cups of sugar at a time and yield a large volume of cotton candy very quickly. They require pre-made commercial-grade sugars, and handmade sugars are too delicate for high temperatures.
Vertical machines run at lower temperatures allowing the handmade sugars to retain their flavours and colours. The chamber only holds one tablespoon of sugar and produces one perfect puff of cotton candy at a time.
My process: I mix high-quality, super-concentrated candy oils with sugar and food colouring. That’s it—no additional preservatives, flowing agents, food starches etc.
I allow the sugars to dry over 24-48 hours before using them. I make each cake layer by layer using one tablespoon of sugar at a time. Our cakes are made from 16-18 tablespoons of sugar, equivalent to 18-20 large cones of cotton candy.
